1 package frozen imitation crab meat
½ English cucumber
1 orange pepper
2 stalks celery
1 Cup low-fat mayonnaise
Juice of ½ a lemon
Salt and pepper to taste
- Chop all salad ingredients into very tiny pieces and combine in a large mixing bowl.
- Combine ingredients for dressing and pour over salad. Toss.
- Lay two endive leaves on individual plates and fill with salad.
