Crab Salad in Endives

Ingredients:

1 package frozen imitation crab meat

½ English cucumber

1 orange pepper

2 scallions

2 stalks celery

2-3 endives

 

Dressing:

1 Cup low-fat mayonnaise

Juice of ½ a lemon

Salt and pepper to taste

 

  1. Chop all salad ingredients into very tiny pieces and combine in a large mixing bowl.
  2. Combine ingredients for dressing and pour over salad.  Toss.
  3. Lay two endive leaves on individual plates and fill with salad.
  4. Serve.
