Rice-Quinoa Pilaf

This dish is great when paired with the Persian Honey-Mustard Chicken and a green salad.

Ingredients:

2 Cups Rice-Quinoa mix (I buy this at Costco but many supermarkets sell a version of it)

1 yellow onion

2 Tbs. olive oil

1 Cup sliced green olives

1 bunch Italian parsley, washed, checked and finely chopped.

1.  Cook the Rice-Quinoa mix according to directions.  Add a pinch of salt.

2.  Dice and fry the onion in olive oil.

3.  When the mix is finished cooking, add the onion, olives and parsley.

4.  Season with salt and pepper if desired.
