This salad can be served as a whole meal on a hot summer’s day.
1 Head Romaine Lettuce torn into bite-sized pieces or 1 bag checked Romaine
2 packages smoked turkey slices, torn into bite-sized pieces
2 packages turkey pastrami slices, torn into bite-sized pieces
½ box Angel Hair spaghetti
¾ Cup Grape Tomatoes, sliced
1 Cup low-fat mayonnaise
¾ lemon, juiced
Salt and Pepper to taste
- Cook and drain spaghetti according to the box. Rinse with cold water.
- Layer in a large, glass trifle bowl: lettuce, turkey slices, spaghetti, tomatoes.
- Combine ingredients for dressing in a small Tupperware or bowl.
- Pour dressing over the salad and toss right before serving.
