Turkey Trifle Salad

This salad can be served as a whole meal on a hot summer’s day.

Ingredients:

1 Head Romaine Lettuce torn into bite-sized pieces or 1 bag checked Romaine

2 packages smoked turkey slices, torn into bite-sized pieces

2 packages turkey pastrami slices, torn into bite-sized pieces

½ box Angel Hair spaghetti

¾ Cup Grape Tomatoes, sliced

 

Dressing:

1 Cup low-fat mayonnaise

¾ lemon, juiced

Salt and Pepper to taste

 

  1.  Cook and drain spaghetti according to the box.  Rinse with cold water.
  2. Layer in a large, glass trifle bowl: lettuce, turkey slices, spaghetti, tomatoes.
  3. Combine ingredients for dressing in a small Tupperware or bowl.
  4. Pour dressing over the salad and toss right before serving.
