Mashed Cauliflower

This is a great low-carb alternative to mashed potatoes.  I like to serve alongside broiled salmon with a green salad on the side.  It also tastes great combined with mashed potatoes and sprinkled with parmesan cheese.

Ingredients:

1 head of cauliflower, cut into pieces

Salt and pepper

Sharp grated cheese (optional for dairy meals)

  1.  Boil salted water and add cauliflower.
  2. Cook until soft and drain.
  3. Mash cauliflower with a potato masher or use a hand blender
  4. Season with salt and pepper and melt in cheese for dairy meals.
