This is a great low-carb alternative to mashed potatoes. I like to serve alongside broiled salmon with a green salad on the side. It also tastes great combined with mashed potatoes and sprinkled with parmesan cheese.
1 head of cauliflower, cut into pieces
Salt and pepper
Sharp grated cheese (optional for dairy meals)
- Boil salted water and add cauliflower.
- Cook until soft and drain.
- Mash cauliflower with a potato masher or use a hand blender
- Season with salt and pepper and melt in cheese for dairy meals.
