Grandma Mollie’s Chicken

This is one of my great-grandmother’s famous recipes.  I found it written on a recipe card in my grandmother’s house.  Some of the quantities can be adjusted, as she never cooked from an actual recipe but more by feel and memory.


1 chicken, cut into eighths

1 Cup apricot jam

1 medium onion, finely chopped

2 cloves garlic, pressed or mashed

Salt and pepper to taste


  1.  Combine apricot jam, onion and garlic in a small mixing bowl.
  2. Rinse and dry chicken and lay in a 9×13 inch baking pan.  Sprinkle with salt and pepper.
  3. Spread apricot mixture over chicken.
  4. Bake at 350 Degrees approx. 1 ½ hours or until chicken is cooked through and tender.
