This recipe is delicious served alongside chicken schnitzel for a Shabbos lunch without Cholent, or Friday night with any kind of baked or roasted chicken.
1 Cup brown rice
1 can mushrooms, liquid reserved
3 celery stalks, diced
1 Cup craisins or dried cherries
1-2 small onions
2 Tbs. olive oil
Water plus mushroom liquid to equal 2 Cups
2-3 Tbs. soy sauce
- Cook rice in the water and mushroom brine, until fluffy.
- Heat oil in a frying pan and saute onion until deep golden.
- Add mushrooms, celery and soy sauce.
- Mix with rice and craizins.
