Jeweled Brown Rice Pilaf

This recipe is delicious served alongside chicken schnitzel for a Shabbos lunch without Cholent, or Friday night with any kind of baked or roasted chicken.


1 Cup brown rice

1 can mushrooms, liquid reserved

3 celery stalks, diced

1 Cup craisins or dried cherries

1-2 small onions

2 Tbs. olive oil

Water plus mushroom liquid to equal 2 Cups

2-3 Tbs. soy sauce

  1.  Cook rice in the water and mushroom brine, until fluffy.
  2. Heat oil in a frying pan and saute onion until deep golden.
  3. Add mushrooms, celery and soy sauce.
  4. Mix with rice and craizins.
  5. Serve.
